I often try to get my fix of indulgent desserts and meals, without the calories and hard work that come along with making beloved comfort dishes. Many times my attempts to marry healthy and rich fail. This attempt worked, so I thought I’d share it with you.
2 bags frozen broccoli, preferably organic
1 carton low sodium organic chicken broth
4 cups organic 1% milk
1 cup parmesan cheese
½ yellow onion chopped
½ red onion chopped
5 garlic buds chopped
Sea salt and pepper to taste
Boil 1 bag of broccoli, onions, garlic, and chicken broth in a large pot . When all the ingredients are well cooked, allow the contents of the pot to cool. Once cooled, place the mixture into a blender and add milk to blend. Return all contents to the pot, add a ½ bag of broccoli, salt and pepper to taste, amd parmesan cheese. Slowly bring your soup up to temperature.
